Since I leave the skins on the onions and garlic, (it adds a nice color), and don't peel the sweet potatoes etc, I strain the veggies out. But if you wanted to use the veggies, you can take the skins off and peel the veggies before you make the stock. Once the broth is strained yo maybe puree them and use them to thicken soup.
